Slowcooker Peanutbutter Chicken

Simple chicken with peanut sauce made in a slow cooker. With a few simple ingredients and a little time, you get a really good meal without much effort.

I make this recipe in the slow cooker, but of course you can make this in a regular pot with a lid as well. In that case, let the pot simmer for about 20 minutes.

I like to use chicken thighs for this recipe as it will be better and not as dry as chicken breast fillets can sometimes become when slow-cooking, but you take what you have.

The 2 different oils in the recipe are used in slightly different ways. The olive oil is for frying the chicken a bit and the sesame oil is more of a flavoring agent for the peanut sauce. In general, you shouldn't use sesame oil (the one made from hard-roasted sesame seeds can't handle very high heat) for frying, but there are varieties of sesame oil (lightly roasted, can handle higher heat) that are perfect for both frying and deep-frying.

I have not added any specific amount of salt or black pepper as it entirely depends on the ingredients used. For example. some soy sauces with a lower salt content may require you to add a little salt to the pot. I usually avoid black pepper completely, but if the sweet chili sauce used does not contain very much chili, a little extra chili flakes or black pepper may be needed. The recipe is therefore a fairly good basis that may need to be adjusted slightly to achieve the desired taste.

For serving, I make it simple with boiled rice, some sliced ​​green onions, lime wedges and some crushed salted peanuts.

The finished dish does well in the fridge for a few days and I also think this dish works well as a lunch box to heat up at work.

  1. Trim and possibly cut the chicken thigh fillets in half.
  2. Brown the chicken all over in a little olive oil and place in the slow cooker.
  3. Stir together all the ingredients for the sauce and pour over the chicken in the slow cooker. Mix.
  4. Set slow cooker on LOW, 3 hours.
  5. Salt and pepper if necessary. Sometimes I add a little more lime juice.
  6. Serve with boiled rice, green onions, lime wedges and crushed salted peanuts.
