Creamy pasta with chicken mince

This dish is simple and relatively quick to prepare, but gives a slightly luxurious feel compared to the usual everyday pasta.
I found the original recipe here (matinspo.se) and changed it minimally based on my own preferences and what I had at home at the time. It's a good basic recipe that I will experiment more with in the future. For example, I choose to add a little cayenne pepper (or even stronger chili) but some people dislike spicy food and then it may be time to avoid all forms of heat.
It's a perfect recipe for a family dinner that you can just throw on the table in the saucepan you cooked everything in. If you want to serve portions instead, that's of course fine too. For me, 4 servings feels quite generous in this case, but in case you have leftovers, it's a good idea to use for a lunchbox the next day. A normal amount of pasta per serving varies from person to person, but in this case I use 125g/person which is generally considered a lot. I choose to use a whole package (sold in 500g / pcs) of pasta instead of having half-filled pasta boxes in the pantry. Adjust the amount of pasta downwards if necessary.
The amount of liquid in the dish depends a bit on how long and how much it simmers before serving. If it gets too dry, just add more liquid. The tip is to take some of the water that the pasta cooks in, just remember that it can also make the dish a little saltier.
I cook the pasta in parallel with the other instructions so that it is ready at about the same time as the pasta sauce. I start heating the pasta water about when the chicken mince is done cooking, but the time here depends on the type of pasta used, how much water is used, how quickly the pasta sauce cooks, and how efficient the stove is, so I deliberately avoid writing it in the instructions below.
I choose to serve the dish in generous portions on a plate and top with grated parmesan and fresh herbs like oregano or basil.

- In a frying pan - fry the minced chicken in the oil.
- While the meat is frying, peel and finely chop the onion and garlic.
- When the minced chicken is cooked through, add the finely chopped onion and garlic. Fry until the onion is soft.
- Add the tomato puree and all the dry spices, stir and fry for a minute.
- Add water, cream, stock cube and sun-dried tomato, stir and let simmer for 5-10 minutes.
- Turn off the heat and add the fresh spinach, mix well.
- Taste with more salt and pepper if necessary.
- Add the cooked pasta, mix with the sauce and serve immediately.
