Orange Chicken Meatballs

Oven-baked chicken meatballs tossed in sweet orange sauce and served with egg noodles.

Oven-baked chicken meatballs are easy to make and can be used for many things. Here I choose to make a sweet orange sauce that the meatballs are tossed in and then mix in boiled egg noodles to easily serve everything in a frying pan.
I have a similar recipe for Orange Chicken where I instead use chicken thigh fillets and fry them, which is perhaps more classic. This recipe is simpler in my opinion but just as delicious.
The soy sauce I use is a fairly mild and light variety. Some types of soy sauce can make the sauce very dark, which doesn't look very nice.
When I shape the meatballs, I usually use a little cold water or oil to prevent the minced meat from sticking. It also makes it easier if you use gloves.
Of course, you can fry the meatballs in a frying pan with a little oil or use an air fryer instead of baking them in the oven.

- Preheat the oven to 200°C.
- Mix all the ingredients for the meatballs. The mixture will be better after 30-60 minutes in the fridge, but it is not absolutely necessary.
- Form about 20 meatballs and place on a baking sheet with baking paper.
- Cook in the oven, 200°C, 25 minutes.
- In a frying pan or wok, bring the orange juice, sugar, soy sauce, finely grated garlic, finely grated ginger and rice vinegar to the boil. Then simmer for a few minutes until the sauce has thickened a little.
- Mix the cornstarch with the water and then add this mix to the sauce while stirring.
- Turn off the heat and season the sauce with sesame oil and orange zest. If necessary, also salt and pepper.
- Cook the noodles according to the instructions on the package.
- Finely chop the onion.
- If everything is to be eaten at once, I mix the sauce, meatballs and the cooked noodles in a large frying pan and mix.
- Top with onion and sesame seeds.
