These tasty chicken thighs are marinated in a sweet and tasty Korean chili paste called gochujang. The recipe is simple and quick to prepare and is excellent as a tasty everyday meal (provided you can find chicken thighs at an affordable price).

With a little heat from the gochujang chili paste, sweetness from the honey and salt from the soy sauce, it becomes a very good combination of flavors. However, the heat in gochujang is not that spicy, so the whole family should be able to eat the dish without any problems.

I'm pretty sure this is not a classic Korean recipe but more of a recipe that uses Korean flavors. In my opinion it is a very good recipe that turns out very well even if it is not a genuine classic recipe.

As said before, this is a simple recipe. Just mix up the marinade and leave the chicken in the fridge for a while before it's time to let the oven take care of the rest. The only hard part is probably cleaning the chicken thighs so that you ensure that all small pieces of bone or extra tendons are gone.

If you don't want gluten in this dish, make sure to check both gochujang and soy sauce so that they are gluten-free options.

Tip for a thicker sauce: When the chicken is ready, pour the liquid into a saucepan and let it cook for a few minutes until it thickens. Then pour the thicker sauce back over the chicken and serve.

  1. In an ovenproof dish, mix honey, gochujang, soy sauce, sesame oil, finely grated ginger and finely chopped (or pressed) garlic.
  2. Clean the chicken thighs and cut into smaller pieces.
  3. Add the chicken to the marinade and mix. Let the chicken marinate for 1-24 hours in the refrigerator.
  4. Preheat the oven to 215°C. Take the chicken out of the fridge and let it come to room temperature while the oven heats up.
  5. Cook the chicken for 20 minutes.
  6. Start the oven's grill/broil and continue cooking for another 5-10 minutes. (This can vary greatly between different ovens)
  7. Take the chicken out of the oven and garnish with sliced ​​green onions and sesame seeds.
  8. Serve e.g. with rice and grilled broccoli.
