OK, so let's get this out of the way right away: Is this "toast skagen"? No, but inspired by it - yes. There are a lot of strong feelings around what "toast skagen" contains and its origins - I'm not going to dive too deep into that swamp here. This is just a skagen mix that I like (with slightly less crème fraiche and mayonnaise compared to previous variations I've posted on the site), served on a slice of buttered fried white bread.

I have chosen to punch out a round piece of bread which I think looks nice, but usually it works just as well to just cut off the edges. With a round piece of bread it becomes a bit more of a pastry-like creation that fits nicely at a festive meal.

To save a little money I use lumpfish roe but of course you can use "kalixlöjrom" for extra luxury instead.

  1. Defrost the shrimp at room temperature on paper. This will take 1-2 hours.
  2. Peel the shrimp and let them drain in a sieve if they are watery.
  3. Save a few shrimp for decoration and then roughly chop the rest if they are large, small ones can be left whole.
  4. Mix chopped shrimp, crème fraiche, mayonnaise, finely chopped red onion, lumpfish roe and lemon juice. Season with salt and black pepper.
  5. Store in a container with a lid in the refrigerator until serving.
Toast
  1. Cut off the edges or punch out a round piece of bread.
  2. Fry the bread in the butter at medium temperature until the bread is golden brown.
  3. Let the bread cool to room temperature.
  4. Place a generous dollop of Skagen mix on the bread pieces.
  5. Top with the shrimps saved earlier, lumpfish roe, a slice of lemon and a small sprig of dill.
