Suddenly it was time for the wild garlic to make an appearance again! Of course there will be a wild garlic pesto which I chose to use to make a pizza. On the pizza I mixed the pesto with creme fraiche and used this as a base which was then topped with grated cheese, fried mushrooms and fried asparagus.

It turned out a good, powerful and tasty pizza where the wild garlic takes up a lot of space. If you only want a soft note of wild garlic, this is not the recipe for you. Or well - you can of course reduce the amount of wild garlic pesto... :)

Pizza Dough
  1. Mix room temperature water with dry yeast - let stand 10 minutes.
  2. Add flour and salt, knead in a machine or by hand until the dough is smooth (5-10 minutes).
  3. Cover the dough and let rise until it has doubled in size (1-2 hours).
  4. Divide the dough into 4 pieces (about 240g/piece), roll into smooth balls and place in lightly oiled containers. Store in the refrigerator overnight.
Pizza
  1. Clean and cut the asparagus. Fry quickly in a frying pan with a little oil and butter - let cool.
  2. Clean and slice the mushrooms. Fry quickly in a frying pan - let cool.
  3. Take out the dough and allow it to stand at room temperature for 60-120 minutes.
  4. Stretch out the dough using a little extra flour.
  5. Mix the wild garlic pesto with creme fraiche.
  6. Spread the wild garlic pesto cream, cheese, mushrooms and asparagus - bake in the pizza oven.
  7. When the pizza is ready, top with toasted pine nuts, pickled red onion, parmigiano reggiano and fresh oregano.
