A traditional bulgogi is made with thinly sliced ​​beef that has been marinated and then grilled over hot coals. This dish is made with ground beef that has been marinated in similar flavors, and then served with pasta. So even though it's not the least bit traditional, I think it's good enough to try when the usual "spaghetti and ground beef sauce" feels a bit boring.

Here I use a lot of ingredients that I think are necessary to get the flavor I'm looking for. As for the soy sauce, I choose a dark variety, but of course a light (Japanese) one is fine instead. It can be a bit difficult to get the right amount of salt in the dish and depending on how much of the pasta water you add, it can vary quite a bit. If you want to be on the safe side, you can use a less salted (Japanese) version of soy sauce and also cook the pasta in less salted water and then taste just before serving and add salt if necessary.

If you want to add a little heat to the dish, both sriracha and/or chili jam work well. Taste before serving and add if necessary.

  1. Mix the minced meat with pressed garlic, sliced ​​spring onions (the harder white part - save the green for decoration), soy sauce, oyster sauce, mirin, brown sugar, go-chu-jang and sesame oil in a bowl - let marinate for a while.
  2. Fry the meat mix in the oil until most of the liquid is gone.
  3. While the meat mix is ​​frying - boil the pasta in lightly salted water.
  4. Add a little (1-2 dl) of the pasta water to the meat mix and let it bubble for a few more minutes.
  5. When most of the liquid has boiled away (again), add the cooked pasta and mix.
  6. Serve with some salad, toasted sesame seeds and the sliced ​​green part of the spring onions.
