A symphony in bacon! Hmmm, maybe a bit too much... But it's delicious anyway. With a relatively quick bacon jam and oven-fried bacon slices, this is a massive burger that will surely satisfy the bacon lover.

I make the bacon jam in advance and then leave it in the fridge where it will last for a few days. It will also harden and become a bit grey and dull, but when it is heated up, it becomes wonderfully red again. I simply take the bacon slices and cook them in a 200°C oven, until they are crispy. They are then allowed to rest for a while on a paper towel to let some extra fat drain while the rest of the burger is cooked.

I have written a little about my experiences with smashburgers in this article and hope that it can explain the things that I may not go through in detail right here in the recipe. There I write a little about what type of ground beef is good to use and things to think about in general.

I don't have a fancy griddle or the like unfortunately, but you can also do this in a regular durable frying pan. However, the frying pan needs to withstand a little scraping so use carbon steel or stainless steel frying pan (absolutely do not use a frying pan with a non-stick coating). Sure, it's a bit cramped in the pan, but you can do it in batches instead if you think it's easier. Personally, I don't care that much if the burger turns out a little lopsided - that's just part of the charm. It's definitely delicious anyway.

  1. Prepare the bacon jam in advance - store in the fridge until ready to serve.
  2. Fry the bacon slices in a 200°C oven until crispy - drain on paper.
  3. Toast the bread in a hot pan (optionally with a little melted butter).
  4. Form 2 balls of the minced meat - approx. 80g each.
  5. Place the balls in a hot frying pan (optionally with a little oil) and press the patties out thinly.
  6. Fry until the patties are browned and then scrape them off the pan and turn.
  7. Place a slice of cheese on each patty and let melt.
  8. Toss the burger together. Bread, mayonnaise, crisp lettuce, tomato, the fried steaks with cheese, bacon slices, bacon jam and bread.
