A smashburger with cheese, pineapple, BBQ sauce and sriracha? Of course it's something you have to try. This burger is inspired by the fictional Hawaiian-themed hamburger chain "Big Kahuna Burger" (more info on wikipedia) that appears in several of Quentin Tarantino's films. So it's not a burger that actually exists, but that hasn't stopped the Internet from creating a variety of different variations. This is my attempt and I've researched many variations to come up with what I consider to be the most optimal.
First of all - I think it has to be a smash burger with cheese. Adding some kind of BBQ or Teriyaki sauce is also a given - I landed on BBQ sauce since I had it at home. Then of course it is also a must to have pineapple which I choose to give some color and grill marks in a frying pan that I also use to toast the hamburger buns. This should also work great on a real outdoor grill, but I don't have one... I then finish with a little twist - sriracha chili sauce which I think goes very well with pineapple in general, but especially in this context.
I have written a little about my experiences with smashburgers in this article and hope that it can explain the things that I may not go through in detail right here in the recipe. There I write a little about what type of ground beef is good to use and things to think about in general.
I don't have a fancy griddle or the like unfortunately, but you can also do this in a regular durable frying pan. However, the frying pan needs to withstand a little scraping so use carbon steel or stainless steel frying pan (absolutely do not use a frying pan with a non-stick coating). Sure, it's a bit cramped in the pan, but you can do it in batches instead if you think it's easier. Personally, I don't care that much if the burger turns out a little lopsided - that's just part of the charm. It's definitely delicious anyway.
So is this what Quentin Tarantino had in mind for a burger from Big Kahuna Burger to taste like? No idea at all, but I can probably guarantee that he would have been satisfied with this burger anyway. The burger has solid flavors and it's hard not to enjoy it and want another one.

- Slice some red onion.
- Roast 2 slices of pineapple in a frying pan until they have a little color.
- Roast the bread in the same pan (possibly brushed with a little melted butter).
- Form 2 balls of the minced meat - approx. 80g each.
- Place the balls in a hot frying pan (possibly with a little oil) and press the patties out thinly.
- Fry until the patties have color and then scrape them off the pan and turn.
- Place a slice of cheese on each patty and let melt.
- Toss together the burger. Bread, BBQ sauce, iceberg lettuce, the fried patties with the cheese, pineapple slices, sliced red onion, sriracha, ketchup and bread.
