Here we have a legendary chocolate cake that has a layer of apricot jam. Usually served with a little whipped cream. The original recipe is said to have been created by Franz Sacher (1832) but exactly what this recipe looked like is not known.
How close to the original recipe this recipe comes is anyone's guess, but it is definitely a good cake nonetheless. It is not particularly difficult to make either.
The cake is best kept cool rather than cold.

Cake base
- Preheat the oven to 175°C.
- Melt the chocolate over a water bath.
- Beat the room temperature butter and sugar - add the eggs, one at a time and beat well.
- Add the melted chocolate and then the dry ingredients - mix well.
- Pour the batter into a springform pan (20-22 cm diameter) that is either greased and floured or covered with baking paper.
- Bake in the lower part of the oven for 30-40 minutes - use a toothpick to determine when the cake is done.
- Let cool on a wire rack at room temperature.
- Divide the base into 2 parts.
- Heat the marmalade a little (in a saucepan or in the microwave) so that it is easier to spread.
- Spread the marmalade between the bases.
- Melt the chocolate over a water bath and mix in the oil.
- Spread the chocolate over the cake. Let the cake cool until serving.
- Serve with whipped cream.
