This simple and very tasty shrimp sandwich is served on a slice of PolarVete® from Polarbröd. The shrimp sandwich is quick to throw together, but I add 1 hour (may need more) to thaw the frozen shrimp at room temperature. Then how long it takes to peel the shrimp is up to how good you are at it.
Just like all other shrimp sandwiches, this one has very few ingredients so make sure to choose the ones you really like. For me, this means I choose frozen shrimp that I peel myself, PolarVete® as a base and a mayonnaise that is quite mild and doesn't take over too much. The shrimp are the star here and the rest is there to enhance the flavor of them - not take over. You can of course use pre-peeled shrimp in the mixture if you're in a hurry, but I think it makes a huge difference in taste and consistency. For shrimp mixes and the like, it doesn't matter much if you use pre-peeled shrimp, but when the shrimp are the focus like they are here, you should spend some time (and money) on them.
I weighed the frozen shrimp to 300g. After I peeled, I had 75g left, but that can vary. It was a good amount of shrimp, although I could have gone up a little more to get a real mountain. It was a bit of a trade-off between how luxurious you want it and how much money you want to spend - everything is expensive these days...

- Defrost the frozen shrimp at room temperature (1-2 hours).
- Boil the egg (hard-boiled).
- Peel the shrimp.
- Spread mayonnaise on the bread, cover with lettuce and sliced egg.
- Cover with the peeled shrimp.
- Garnish with a slice of lemon and dill. Complete with some cucumber and tomato, if desired.
