A simple potato frittata that starts in a frying pan and finishes in the oven. This recipe makes two servings and is a great way to use up leftover potatoes for a healthy, delicious, and easy meal.

I've simply listed "cheese" in the recipe since you can use whatever you have on hand, but I would recommend a flavorful, aged cheese. I've used aged cheddar, a mix of standard mild cheese and Pecorino, and other combinations. Most types work well, but a flavorful cheese really elevates the dish.

I usually serve the frittata with chopped parsley (or another herb) and a little pickled red onion for an extra kick of flavor.
