A simple pizza made a little more interesting by drizzling flavored honey over it.

A classic and simple pepperoni pizza with sweet and hot honey is not bad at all. I have posted the hot honey as a own recipe as you don't need much for this pizza. You can also use store-bought hot honey if you prefer.
The pizza is simple in its components and goes well with a normal cheese such as gouda. You can use other varieties as well, but I think a regular, relatively tasteless cheese works best. The pepperoni will take over the flavor anyway.
I choose to use fresh chili for the hot honey as I have lots of extra chilis from my garden. However, you can use dried chili instead.

Pizza Dough
- Mix room temperature water with dry yeast - let stand 10 minutes.
- Add flour and salt, knead in a machine or by hand until the dough is smooth (5-10 minutes).
- Cover the dough and let rise until it has doubled in size (1-2 hours).
- Divide the dough into 4 pieces (about 240g/piece), roll into smooth balls and place in lightly oiled containers. Store in the refrigerator overnight (up to 72 hours).
- Take out the dough and allow it to stand at room temperature for 60-120 minutes.
- Stretch out the dough using a little extra flour.
- Spread tomato sauce in a thin layer on the pizza dough.
- Add cheese and pepperoni - bake in pizza oven.
- Top the still warm pizza with oregano and hot honey.
