A spartan and very tasty pizza without tomato sauce. Only cheese, pancetta, garlic, basil and olive oil give it a rich flavor.

This was a bit of a surprise. I was surfing the internet looking for some new pizzas to try and then happened to see lilla napoli's pizzainspiration-guide where I found their "pecorino & pancetta" variant which I thought seemed very interesting. I think their description "semi-unexpected" was what made me have to try it as I love those kinds of unexpected combinations. Of course you can trust lilla napoli and the combination was really good!

Strangely enough, I had a bit of trouble finding really thinly sliced ​​pancetta, so I bought a whole piece and sliced ​​it as thinly as I could myself. It turned out OK, but it would have probably been even better if I had properly sliced ​​pancetta instead. I also reduce the amount of olive oil a little as I thought it was a bit much, but you decide for yourself what is the appropriate amount here of course.

Since I am giving the recipe for 4 pizzas and I don't have any mechanism on the site to show the recipe for smaller portions (maybe throwing something together over the weekend) so I thought I would make it a little easier by listing the toppings for one pizza:

  • Mozzarella: 40g
  • Pancetta: 20g
  • Garlic: 5g (one clove)
  • Basil: 1.5g (5 pcs)
  • Pecorino: 15g
  • Olive oil: 5.25g (1.2 teaspoon)

Pizza Dough
  1. Mix room temperature water with dry yeast - let stand 10 minutes.
  2. Add flour and salt, knead in a machine or by hand until the dough is smooth (5-10 minutes).
  3. Cover the dough and let rise until it has doubled in size (1-2 hours).
  4. Divide the dough into 4 pieces (about 240g/piece), roll into smooth balls and place in lightly oiled containers. Store in the refrigerator overnight.
