When I looked around at different pizzerias' menus, a la mafia (sometimes spelled "la maffia") can sometimes contain a lot of different ingredients such as salami, ham, chicken, beef tenderloin, peppers, mushrooms, eggs, garlic and/or garlic sauce.

So it seems that there is a lot of variation between pizzerias as to what a la mafia should contain (and how it is spelled), but most people seem to agree that it should be pancetta/bacon and onion. Since I had a small piece of pancetta left in the fridge, I used a thinly sliced ​​one here, but sliced ​​bacon cut into slightly smaller pieces works just as well.

I topped the pizza with a lot of freshly ground black pepper and a little dried oregano, which I think gave the pizza a distinct and pleasant flavor. You can of course adjust the amount to suit your own taste buds, but I think you should try to give the pizza a hefty dose of black pepper.

  1. Mix room temperature water with dry yeast - let stand 10 minutes.
  2. Add flour and salt, knead in a machine or by hand until the dough is smooth (5-10 minutes).
  3. Cover the dough and let rise until it has doubled in size (1-2 hours).
  4. Divide the dough into 4 pieces (about 240g/piece), roll into smooth balls and place in lightly oiled containers. Store in the refrigerator overnight (up to 72 hours).

  1. Take out the dough and allow it to stand at room temperature for 60-120 minutes.
  2. Slice the onion thinly.
  3. Stretch out the dough using a little extra flour.
  4. Spread a thin layer of tomatosauce on the pizza dough.
  5. Add mozzarella, pancetta and sliced ​​onion - bake in the pizza oven.
  6. Top the still warm pizza with plenty of freshly ground black pepper and dried oregano.
