When I looked around at different pizzerias' menus, a la mafia (sometimes spelled "la maffia") can sometimes contain a lot of different ingredients such as salami, ham, chicken, beef tenderloin, peppers, mushrooms, eggs, garlic and/or garlic sauce.
So it seems that there is a lot of variation between pizzerias as to what a la mafia should contain (and how it is spelled), but most people seem to agree that it should be pancetta/bacon and onion. Since I had a small piece of pancetta left in the fridge, I used a thinly sliced one here, but sliced bacon cut into slightly smaller pieces works just as well.
I topped the pizza with a lot of freshly ground black pepper and a little dried oregano, which I think gave the pizza a distinct and pleasant flavor. You can of course adjust the amount to suit your own taste buds, but I think you should try to give the pizza a hefty dose of black pepper.
