This is a fairly new favorite at home - easy to make and filled with vegetables. Instead of ground beef, red lentils are used, but it is definitely a tasty meal that fills you up. It may be perceived as 4 large portions, but that is pretty much exactly how much I eat (along with 100g pasta, some grated parmesan and maybe even a little ketchup).
I think this is a pretty good basic recipe, but of course you can adjust it according to personal taste. A little sweetness from sugar or honey can be added. Cream or creme fraiche can also be added, but I don't think it is necessary. It doesn't have to be red wine vinegar, but other types such as balsamic vinegar are also fine. Omit the chili if you don't like spicy food or add a lot if you want it hotter. It doesn't have to be fresh chili, but you can use a tablespoon of sambal oelek instead. In short - you can vary the recipe a lot.

- Peel and finely chop the onion, celery and carrot.
- Fry the vegetables in olive oil for a few minutes.
- Add the sliced garlic and tomato puree. Fry for a few minutes.
- Add the red wine vinegar and fry for another few minutes.
- Add the tomatoes, water, stock cube, soy sauce, chili, bay leaf, thyme and rosemary. Bring to a boil and then reduce the heat.
- Add the red lentils and stir.
- Simmer for 30-40 minutes under the lid. Stir regularly and add water if necessary.
- Season with salt and pepper and serve with cooked pasta, grated parmesan and basil.
