I realized I wanted to eat a bit more quinoa, but many of the recipes I found were generally pretty bland. So I combined two of my previous recipes; korean fried chicken and poké bowl with air fryer salmon to make a tasty bowl of vegetables, quinoa and chicken thighs covered in a tasty gochujang sauce. The pickled red onion and mango are accessories that I think go very well, but beyond that, you can of course combine freely to create the bowl you appreciate best.

When I make this, I prepare the sauce well in advance and let it sit in the fridge where it can sit for a while. I also often only make one or two portions at a time as the air fryer I have is perfect for 400-500g chicken thighs (so I don't have to do it in batches) and the rest are just vegetables that you can pick from the fridge and freezer as needed.

Gochujang Sauce
  1. Finely chop, press or grate the garlic and sauté it quickly (10-30 seconds) with the oil in a small saucepan.
  2. Mix in the rest of the ingredients and bring to a boil.
  3. Reduce the heat and simmer for a few minutes.
  4. Let cool. Can be prepared well in advance and stored in the refrigerator for a few days.
Quinoa Bowl
  1. Make sure you have the Gochujang sauce ready, cook the quinoa according to the instructions on the package.
  2. Clean the chicken thighs.
  3. Preheat the air fryer to 190°C, 3-5 minutes.
  4. Place the chicken in the air fryer (the pieces should not cover each other - probably in 2 batches).
  5. Cook 8+8 minutes, or until the thickest piece has an internal temperature of 72°C.
  6. Let the chicken pieces cool slightly and then cut them into smaller pieces.
  7. Cover the hot chicken with the sauce and stir well.
  8. Place all ingredients in a bowl and garnish with sliced ​​green onions, lime wedges and sesame seeds.
