So if you're going to be picky, maybe this isn't gyros according to the classic definition since I don't cook it on a rotating skewer, but I think the end result is still really good and easy.
An alternative is to take the marinated meat and thread it onto skewers that are then grilled on an outdoor grill, but this version in the oven is very simple and perfect for a weekday dinner when you've found pork loin at an extra price. While the meat is cooking in the oven, you can quickly throw together other ingredients such as tzatziki, air fryer roasted potatoes, tomato, onion and olives.

- Preheat the oven to 225°C.
- Cut the meat into thin strips.
- Mix with the rest of the ingredients (except parsley) and let marinate briefly.
- Cook for 20-30 minutes until the meat is cooked through. Turn halfway through.
- Serve with chopped parsley and other accessories.
