Classic egg halves with a little lumpfish roe - easy to make and in my opinion you can't have a Christmas buffet without them. There are lots of different variations, but this is probably the one I choose to make most of the time. A common variation is to just have a dollop of mayonnaise directly on the egg half, but I think that's a bit too much. By mixing the mayonnaise with crème fraiche and also seasoning with a little dill, salt and pepper, I think it tastes better. Sometimes I choose to mix in lumpfish roe too, but if it's a bit fancier, you can put it on top with a small sprig of dill too.

The egg halves should be served immediately or at least a short time after they're cooked. They CAN be stored in the refrigerator for a day, but are best immediately after they're cooked.

  1. Boil the eggs (hard-boiled).
  2. Let the eggs cool in cold water and store in the refrigerator until serving.
  3. To serve: Peel the eggs and cut them lengthwise.
  4. Mix together the mayonnaise, crème fraiche, chopped dill, salt and pepper. Spread or drizzle over the egg halves.
  5. Place a small dollop of lumpfish roe on top and top with a small sprig of dill.
