A chocolate mousse made with only 2 ingredients that is really rich and delicious. However, it requires a little experimentation with which chocolate to use. I have tested a few different variants and the one that I think was the best (without costing a lot) was 55% dark baking chocolate from ICA. I also tested a few other variants, including one with 70% cocoa content and it wasn't nearly as good.

Together with some sweet oat crunch, fresh berries and some blueberry/raspberry jam, you get an easy-to-make dessert that can be prepared well in advance.

The amount of oat crunch in this recipe is perfect for a baking sheet and is more than enough for 12 servings. However, I think you can have a little extra in a bowl on the table for those who want more. It makes a pretty rich and rich chocolate mousse so it's not wrong to have some extra sweet accessories ready.

Chocolate mousse
  1. Measure half of the cream and pour into a small saucepan and add the chocolate (in smaller pieces).
  2. Heat over low/medium heat until the chocolate melts, then remove from heat and let cool slightly.
  3. Whisk the other half of the cream in a separate bowl (stop just before it turns firm).
  4. Fold the whipped cream into the chocolate mixture and mix well.
  5. Pour into glasses and refrigerate until ready to serve.
Oat crunch
  1. Take the butter out of the fridge and let it warm to room temperature.
  2. Preheat the oven to 180°C.
  3. Mix all ingredients well and spread on a baking sheet with baking paper.
  4. Roast for 20-25 minutes, mix halfway through.
  5. Remove when the crunch has turned a little brown (dark golden) and let cool to room temperature.
