A spicy jam with a bit of chutney vibes that is a great way to save on a bountiful chili harvest.

This jam is a new way for me to take care of the chilies I haven't used yet from this year's harvest. It makes a hot jam that is a bit like chutney and can be stored for a long time provided that you clean and sterilize the jars you use.
For the version that I photographed, I mostly used "stripey" chilies, which can generally be quite hot, and supplemented with some other fresh chilies that I still had in the fridge. This will be hot, and if you want a milder version, you can either use a weaker version of chili or use a smaller amount of the chili you have and supplement with paprika until you have about the same weight (about 300g).
I use this jam mostly to have some chili heat available all year round. So far, I have used the jam in stews, chili con carne and as a side dish on a cheese plate. I can imagine it would be good as a thin layer in a hamburger too. I'm sure I'll discover more uses next year.
The jam should stay fresh for a long time (up to a year), an opened jar about a month in the fridge.

- Clean and cut off the green stem of all the chilies. Peel and chop the ginger into small pieces. Peel the garlic.
- Blend the chilies, ginger, garlic and salt in a food processor with a little of the vinegar.
- Bring the chili paste and the rest of the vinegar to a boil over medium heat in a saucepan.
- Reduce the heat, add the jam sugar and simmer over low heat for 30-40 minutes.
- Test the consistency of the jam by placing a small lump on a cold plate and running your finger through it - if the jam does not come together again, it is ready.
- Pour into well-cleaned, hot and sterilized jars.
