Simple chickpea balls that can be used in baguettes, for pasta or just eat them as they are with some salad. I use ready-cooked chickpeas that you buy in cans of about 400g where about 230g is the weight of the chickpeas without the liquid. They are similar to falafel balls, but I use dry chickpeas and let them soak for a few hours instead.

Here you simply mix ready-made chickpeas with, among other things, eggs to make balls. Although they usually hold together well, small adjustments may be needed - especially an extra egg may be needed if the mixture is too dry. The balls are also a bit delicate so you have to be a little careful when frying and later handling them so that they don't fall apart.

You can deep-fry these in oil, but here I fry them in a frying pan which is then used to make a quick tomato sauce. Just a quick and easy meal.

Chickpea balls
  1. Empty the can of chickpeas in a sieve and rinse with water. Chop the onion. Coarsely grate the carrot.
  2. Mix the chickpeas, breadcrumbs, eggs, pressed garlic, cumin, chopped parsley, salt and pepper in a food processor until smooth.
  3. Add the grated carrot and mix well.
  4. Form into small balls and then fry in a frying pan with the oil.
  5. Remove the balls from the frying pan and continue with the tomato sauce in the same frying pan (there should be some oil left).
Tomato sauce
  1. Fry the sliced ​​garlic in the oil that is left in the frying pan for a short while.
  2. Add the tomato puree and fry for another minute.
  3. Add the passed tomatoes, oregano and black pepper. Let simmer for a few minutes.
  4. Season with salt.
  5. Add the chickpea balls and carefully cover them with the tomato sauce.
  6. Garnish with some chopped parsley and serve.
