My favorite skagenröra - served here in a baguette.

Skagenröra is found everywhere in Sweden and there are lots of different variations. Shrimp, mayonnaise and dill are the base and it is common to also add crém fraiche, sour cream, lumpfish roe, red onion and/or horseradish.
I use this mixture for a lot of different things. An easy thing to do is to buy the baguettes that are almost ready-baked and cook them in the oven - it usually turns out quite good actually. Of course you can bake your own baguettes, but sometimes it is nice to just buy ready-made ones instead.
This baguette is very well filled and it will be a bit messy to eat it. But it is worth it because it is also very tasty.
I use frozen whole shrimp that I peel myself as I think they are much better than the pre-peeled ones that you can find in many stores. 1kg of shrimp with shells is about 400g without shells.

- Defrost the shrimp at room temperature on paper. This will take 1-2 hours.
- Peel the shrimp and let them drain in a sieve if they are watery.
- Save a few shrimp for decoration and then roughly chop the rest if they are large, small ones can be left whole.
- Mix chopped shrimp, créme fraiche, mayonnaise, finely chopped red onion, rockfish roe and lemon juice. Season with salt and black pepper.
- Store in a container with a lid in the refrigerator until serving.
- Boil the eggs and let them cool.
- Cut a slit in the baguette, start filling with lettuce, sliced cucumber, lemon and sliced egg.
- Then fill with skagenröra and top with shrimp, lumpfish roe, tomato and dill.
