Not only is it a perfect addition to the burger, it's also perfect for serving on a cheese platter or the like.
I use larger pieces of bacon because I like it, but you can chop it finely if you want a smoother version. I also use slightly larger pieces of red onion for the same reason.
You can modify the recipe in many different ways - for example, add a little chili for heat, or use maple syrup instead of the dark syrup. Red onion can be replaced with shallots.

- Cut bacon and onion into small pieces.
- Fry the bacon pieces in a dry frying pan on low heat, about 5 minutes.
- Increase the temperature to medium-high and sauté for about 5 minutes.
- Add chopped onion and cook until onion is soft and slightly translucent (3-5 minutes).
- Add sliced/chopped or pressed garlic and sauté for another minute.
- Reduce heat to low and add remaining ingredients.
- Stir and cook for 2-3 minutes.
- Remove from heat and let cool.
